The Badische Schäufele is a juicy piece of pork shoulder. It is cured and gets its golden yellow color through the beech wood smoke. The Schäufele is Baden's favorite Christmas and New Year's Eve dinner. With field or potato salad or hearty with sauerkraut and mashed potatoes, it is a delicacy. Our Schäufele comes from one of the best butchers in Germany, the upper butcher Winterhalter and is delivered without bone and remains juicy and tender after cooking.
Schäufele also tastes cold with mustard and ginger and a good slice of bread. Cook the meat in hot water for about 1.5 hours. Add an onion and a bay leaf to the water. A customer stews the Schäufele in Römertopf. She pours the good piece of Pinot Noir red wine and cook it in the oven for about 1.5 hours ... hmm tastes excellent!
